Stills are traditionally made from copper because the material offers several important advantages for distillation, especially in producing spirits like whiskey, rum, gin, vodka and brandy.

The main reasons:

1. Copper removes sulfur compounds. During fermentation, yeast produces sulfur-containing compounds. These create harsh, unpleasant flavors. Copper reacts chemically with sulfur, forming copper sulfates that stay inside the still instead of entering the final spirit. Result: cleaner, smoother, better-tasting spirit.

2. Excellent heat conductivity. Copper transfers heat very efficiently and evenly. This means: better control over distillation temperature, more consistent evaporation and condensation.

3. It catalyzes beneficial reactions. Copper surfaces encourage reactions that help develop desirable aromas. It helps break down unwanted compounds and promotes the formation of fruity and sweet esters.

4. Naturally antimicrobial. Copper helps prevent bacterial growth inside the still, keeping the equipment more hygienic with less chemical cleaning.
